This is Tobago’s signature dish, which you will find on many a menu, or from the food vendors at Store Bay near the airport.
Roti
Curried meat, fish or vegetables are wrapped inside a thin skin like a pancake. Widely regarded as a snack, a roti can actually make a hefty meal.
Fresh seafood
In Tobago you can pick up fresh fish as soon as it is landed, and restaurant menus reflect what the chef has decided to do with it that day.
Blue food
Tobago loves its blue food – sweet potato, yam, dasheen, cassava, eddoes. It has a whole festival dedicated to it, and can turn it into just about anything, even lasagne.
