Pepperpot, the national dish
The Guyanese version of this classic takes so long to cook that it’s usually made only for special occasions. But its heady mix of stewed meat, cinnamon, peppers and cassava sauce is worth the wait.
Metemgee stew
Another great Guyanese stew. Its mixed meats are combined with salted fish, onions, thyme, okra, yam, plantain, and dumplings, in a peppery coconut milk sauce.
Garlic pork
Originally part of Guyana’s Portuguese heritage, this lean spicy pork dish is cooked with lots of garlic plus spices and herbs, peppers and gravy, and served with noodles, rice, roti or bread.
Guyanese street food
Guyana has some very tasty snacks that you can often buy from licensed vendors. Bara, for instance, is an Indian-style fritter, made with lentils and spices and fried in vegetable oil.
